Apricot and Orange Roulade

Ingredients:
Batter
4 eggs
⅔ cup sugar
½ cup flour
3 tbsp. orange juice
1 tsp. orange zest
Filling
1 cup dried apricots
1 cup orange juice
Instructions:
Whisk 4 egg whites into peaks while slowly adding sugar. Fold in flour, orange zest, and 3 tablespoons orange juice. Line baking sheet with parchment paper. Pour mixture onto the paper and bake in 350-degree oven for 15 minutes. Turn out the cake batter onto a clean dish towel. Allow to cool, then peel paper off. Boil dried apricots in 1 cup of orange juice until soft. Puree in food processor. Spread cooled filling over cake and roll up. Sprinkle with confectioners sugar.
