Banana Fritters

Yield: 15-20 fritters
Ingredients:
2 ripe medium-sized bananas
1 cup flour
1 ½ tbsp. sugar
1 egg
¼ tsp. salt
2 tsp. baking powder
½ cup milk
3 cups vegetable oil
½ cup powdered sugar
½ tsp. of cinnamon
Instructions:
Combine coarsely chopped bananas, flour, sugar, egg, salt, and baking powder. Add milk to form thick pancake-like batter. Carefully heat vegetable oil in a large pan on stovetop. Place big spoonfuls of batter into oil. Fritters will float to the top of the oil. Fry fritters for about 1-2 minutes on each side, until golden brown. Drain on a paper towel, then sprinkle with powdered sugar and cinnamon.
