Icebox Cake

Ingredients:

  • 3 cups heavy cream

  • ¼ cup powdered sugar

  • 1 tsp. vanilla extract

  • 1 package chocolate wafers

  • 1 small bar dark chocolate

Instructions:

In a large bowl, whisk together heavy cream, powdered sugar, and vanilla extract. Once stiff peaks form, spread a thin layer of whipped cream onto chocolate wafer. Repeat, spreading whipped cream over half of the wafers in the box. Lay covered wafers on their sides on a large plate. Spread whipped cream over the remaining wafers, then place the stack next to the other wafers on the plate. Use the remaining whipped cream to coat the outside of the wafer stacks. Finish with shaved dark chocolate, then refrigerate for at least 4 hours.
